主廚Florian|法式甜點、外燴、手工果醬、巧克力|丰子甜點

丰子,由兩個ㄈㄥ子組成 – Florian與Marie,因著對法式甜點的熱愛,同時感受到法式甜點在台灣的潛力,兩人於2016年創立”丰子”,從事甜點創作、教學、外燴活動與顧問輔導等服務。 Panoramix Project,寓意知名漫畫《高盧英雄傳》中那位製作神奇魔藥的長老(Panoramix),希望跟他一樣,每一款用心製成的甜點,都像potion magique(神奇魔藥)一樣,令生命充滿愉悅的驚喜!

Two pastry lovers, Florian and Marie created Panoramix Project in Taiwan in 2016, providing professional pastry coaching service as well as menu creation and catering service. Panoramix Project’s name is inspired from the famous French comic book series “Astérix” where Panoramix, a druid, gathers his carefully selected ingredients in order to brew a very special magic potion and share it with the villagers to give them strength. This is a relfexion of our philosophy.

瑞士藉的Florian自16歲投身法式甜點領域,至今已近20年。曾經擔任世界頂級品牌Pierre Marcolini的甜點主廚,2015年Florian來台為LVMH集團下的甜點品牌COVA設立旗艦據點,2016年創立丰子後並就此停駐在這座充滿活力與挑戰的島嶼。2018年並受邀至上海新天地商圈開設PINTAO品饕法式甜點。
對於味覺, Florian有著資料庫般的記憶與直覺性的靈感, 不拘框架的自由天性, 是他源源不絕的創作動力。 他喜歡遍嚐各地的食材與風味,跨界交融天然食材開拓多元的風味與想象(flavor),運用不同技法,遊走於酥、脆、綿、滑, 堆疊層次分明的口感(texture),平衡甜、酸、甘、辛,成就出繁覆卻和諧的味覺體驗(taste)。他的甜點總能在驚艷中令人會心一笑。 正如其人 –頑皮, 但溫暖在心。

Florian has been making pastries since 2000 and got his degree (CFC confiseur patissier glacier) in 2003. He worked as head pastry chef in Pierre Marcolini (Brussels) for 10 years and was invited to Taiwan to build up COVA Pasticceria for LVMH group in 2015. In 2016 he created 丰子 Panoramix Project and in 2018 opened PINTAO品饕, his pastry shop in the heart of Shanghai.
Borderless, passionate and meticulous, he tries to bring his personal style and dynamic in his pastries. Each creation features different layers of textures and flavors with the aim of triggering different stages of emotion.

曾任Pierre Marcolini, Ladurée的品牌經理,Marie有幸跟著知名世界頂尖的甜點品牌開拓其視野。深深感動於新一代法式甜點在創意與技法上的超越,愛吃的她在擔任COVA資深品牌經理時,便把Florian萬里迢迢邀請來台灣,並於2016年一同創立丰子。2018年並受邀至上海新天地商圈開設PINTAO品饕法式甜點。
Marie的心願是讓台灣的法式甜點市場與品味都日趨成熟,而這必須同時從消費者和職人兩端著力起。無論是丰子的零售產品、外燴活動或是顧問輔導,搭配著Florian在產品面的卓越創作,Marie則從品牌、營運到服務全面性地朝向這份心願前進。

Marie has extensive experiences as brand manager in some of the world’s most renowned pastry brands, such as Pierre Marcolini, Ladurée and COVA. By knowing chef Florian’s expertise of French pastry in creativity and innovation, she altogether launched a whole new pastry brand “Panoramix Project” in Taiwan in 2016, and later, with invitation, opened another French pastry shop “PINTAO” in the Xintiandi area of Shanghai in 2018.
Marie’s aim is focused on the enhancement and development of French pastry products and services in Taiwan, by initiating new marketing procedures and policies within retail establishments, counseling, and catering events.
